This dish is a staple in our house and comes in many forms depending on what’s in the frig. Here’s how this one took shape …
Add chopped leftover turkey and oil to frying pan or wok and heat until spitting. Add chopped tomatoes, salt and garlic powder. Stir and sauté until mixture is hot and turkey is starting to brown. Add cold cooked rice and peas. Stir and keep moving so rice doesn’t burn. Add an egg or two and scramble in. Sprinkle with soy sauce and teriyaki to taste. EAT!
Tip: For traditional oriental flavor add a very small sprinkle of 5 spice powder and white pepper. Try other veggies, mushrooms and different leftover meats to mix it up.
