A classic pot pie made simpler. One of those comfort food dishes that you want to curl up on the couch with. Luckily this version is quick to make, so you can spend more time on the couch (or in my case putting your kids to bed).
Buy this:
Frozen mixed vegetables (whatever you like) I buy an organic bag of carrots, peas, corn, edamame and green beans.
A large white onion
1lb of Chicken breast
Chicken broth
Frozen pre-made biscuit dough
Make Sure You Have:
Vegetable or Safflower Oil
Cornstarch
Salt, pepper, garlic powder, onion powder, turmeric, and coriander
Set your oven to 375 degrees.
The Cherry on Top: The biscuits. Take them out of the freezer and let them defrost. You will need one biscuit per person.
The chicken. You can use pre-cooked chicken OR cube the chicken, sprinkle it with salt and pepper. You can use the same pan you will cook the veggies in so use something big that will cook evenly. I use a stainless steel pot. Heat the pan with a little oil. Make sure the oil is hot before you put the chicken in the pan, you’ll notice that it will start to glaze over, then throw the chicken in. Let each side of the chicken cubes sear for a minute or two and then remove them from the pan. Cut into the largest piece, it should only be just cooked through. Set aside.
The Main Event. This should take about 5 minutes.
Stir the onion in about two tablespoons of oil. When the onions start to become translucent, add the veggies. Make sure they are thawed and preferably dry. Now add the spices. You want to generously cover the veggies and then stir everything together. As soon as the vegetables start to cook through, you’ll want to make a space at the bottom of the pan and add a cornstarch mixture. Add a teaspoon of cornstarch to cold water in a small bowl and whisk it with a fork until smooth. Add it to the hot pan, then add 2 cups of chicken stock. Add your chicken, bring it all to a boil and then remove from the heat.
Grab a baking dish, you will want your ingredients to fill the dish half way. Pour in your veggies and chicken. Now remember your biscuits? Well they should be defrosted by now! If you don’t have time to roll out your biscuits, just slice them in half and spread them a little with your hands and then set on top of your dish. Now pop your dish in the oven for 20 minutes.
Tip: Big thick biscuits placed on top will not cook through before the tops brown (yes, this happened to us). So, make sure you roll them out or cut and flatten so they cook all the way through and make a nice crust! You could also cook them seperately and just put on top when serving.
