We are fortunate to have several banana trees around our property. When they fruit, we get a lot of bananas and always have a few that go overripe before we can eat them all. We have tried a few different bread recipes to make use of extras. This one turns out great every time and is fairly simple to make. The melted butter is key!

Here’s what you need:
2 to 4 very ripe bananas, peeled and mashed (about 1.5 cups)
1/3 cup salted butter, melted
1 egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 pinch salt
Before starting, preheat oven to 350 F and butter up a standard loaf pan.
Mash the bananas until smooth and whisk in the melted butter. Then add the sugar, salt, baking powder, and baking soda. Whisk until smooth.
Scramble the egg in a separate bowl and then whisk into the mix and add the vanilla too. Blend well to incorporate and then mix in the flour. Use a rubber spatula to fold in the flour, scraping down the sides as you go in order to get a smooth batter.
When the batter is well mixed, it should be the consistency of thick pancake batter but not like a dough. Pour the batter into the buttered loaf pan and tap gently until it flows to fill the pan uniformly.
Bake 50 minutes at 350 F and check for doneness by inserting a wooden toothpick (or similar) to see that it comes out clean. Remove from pan and allow to cool fully before slicing.
Tip: Try mixing in chopped walnuts or chocolate chips (or both) for a little variation.
