Here’s a savory satisfying soup that’s sure to warm you up on a cold day. Here’s what you need:
4 cups washed, cubed red potatoes
2 tbsp chopped onion
1/4 cup fresh chopped celery or
1/4 tsp celery seed
1 tsp salt
1/2 lb shrimp (par-cooked and chopped)
1/2 cup milk
1/4 cup heavy cream
1/2 stick butter (4 tbsp)
1 tbsp cayenne pepper
Put potatoes, onion and celery in salted water, bring to boil and then reduce to simmer for 20 minutes.
Drain out most of the water, add butter and then rough mash.
Add milk and heavy cream
Add chopped shrimp
Add salt and cayenne adjusted to taste
Unless you want to keep this a meat-free dish, try garnishing with crispy cooked bacon, chopped and sprinkled on top of the plated soup.
