Spiny lobster tails straight from the Florida Keys. The only other ingredients you need to make this dish are salt, pepper, butter, few garlic cloves and some cheap white wine.
Cut lobster tails in half lengthwise and season meat with salt and pepper.
In a frying pan, melt a few tabs of butter and add minced garlic on medium-high heat.
Place the tails meat side down in the garlic and butter. Simmer for a couple minutes and move the tails around to prevent the garlic from burning.
By now, the butter should be turning a light brown. Before it starts to burn, splash with white wine to deglaze the pan and create some steam.
Next, flip the tails over and cover with a lid and remove from heat after a minute or so. Meat should be firm to the touch when cooked through.
Plate the tails and drizzle with the butter sauce left in the pan. Sprinkle with dried oregano or parsley and enjoy!
Tip: This method works with just about any crustacean. Try it with scallops and a little extra butter. The trick is to get a nice sear and heat all the way through without over cooking.
